We recently spoke with Bill Wilson, Nordstrom's National Director of Specialty Coffee.
What's your day like?
Most of my time is spent in the stores ensuring consistent quality and service, tasting our products and developing new drink recipes.
New drink recipes—kind of like a mad scientist?
I like to think more like a beverage chef.
So what drink will you go down in history for creating?
Can I choose two?
Our Mexican Mocha Ice Storm is a great summer drink made with premium Ibarra chocolate we import from Mexico, blended with coffee and ice.
And the Tropical Pomegranate smoothie. It's made with fresh-squeezed lemonade, pomegranate, frozen pineapple and bananas and Häagen Dazs mango sorbet. Delicious.
Do you offer up a side of fries with that?
No fries, and we don't serve anything with hydrogenated fats and oils. We do have great grab-and-go sandwiches and salads, all made in-house daily.
So what's your favorite go-to lunch at the Ebar?
I alternate between the Thai Chicken Pasta Salad and the Chicken Caesar Wrap.
How do you compete with all the other coffee shops out there?
Two things: our Nordstrom service, and the fact that we use manual versus automated espresso machines. We build the drink from scratch in the European style. The barista controls and monitors the entire process to make the perfect shot. And we don't use pre-mixes for anything.
How do the Nordstrom coffee experience and the Nordstrom shopping experience interact?
I tell our baristas that we are either the appetizer or dessert to our customers' shopping day.
Will you be offering anything special we should know about during the Anniversary Sale?
All of our retail coffee will be on sale, including our Fair-Trade Organic and Kona as well as the Ibarra Mexican chocolate. Our stainless-steel water bottles and coffee mugs will be on sale, too. And we'll have our coffee card promotion, where our customers get an extra $5 for every $25 purchased on the card.
If you were a coffee drink, what would you be?
The perfect shot of espresso, of course! It's smooth, sweet, and the soul of all our great drinks.
