Organic Eggs Make a Tasty Difference
Some changes are made for the simplest of reasons. Our decision to use organic, cage-free eggs in all Nordstrom restaurants and specialty coffee bars is a good example. We just think it's the right thing to do.
Throughout the United States, our customers can find 104 Nordstrom restaurants and 117 Specialty Coffee bars, each with a welcoming atmosphere and a menu of tempting foods and beverages. Our chefs are committed to serving healthy, delicious meals and they try to use sustainable and local ingredients wherever possible. Organic, cage-free eggs, which we started using exclusively in 2010, are one of those ingredients."Offering organic eggs reflects the integrity of the food we like to purchase and prepare."

When possible, Nordstrom is committed to sourcing eggs and meats from suppliers who use the most humane processing methods commercially available. This includes cage-free eggs and other poultry products. As of October 2010, all the turkey we use comes from suppliers utilizing CAK—considered the most animal-friendly poultry processing method.
"We believe hens and all animals should be treated humanely and we strive to communicate this message to farmers and manufacturers through the ingredients we choose to purchase," said Michael. "Ultimately, we think humanely raised food tastes better, and we believe our customers think so, too."
Healthier, better tasting and sustainable
The organic eggs we purchase come from cage-free hens that have access to the outdoors. This quality of life results in healthier, less stressed chickens—which in turn lead to healthier, higher quality eggs.
The relationship between quality of life and quality of eggs has long been recognized by small, independent farmers. Organic eggs generally have greater levels of vitamin B and folic acid, and often contain more of the essential omega-3 fatty acids. Using organic eggs in the baked goods, desserts and other freshly prepared menu items in our restaurants supports the efforts of our customers to maintain good health.
Organic eggs are also a link in the chain of sustainable farming practices we are committed to supporting. Hens that lay organic eggs are fed certified-organic grain and never any antibiotics or animal by-products. This organic grain is produced without the use of pesticides, thus reducing the environmental impact made by traditional growing methods that use chemical controls. Our customers continue to tell us they'd like to see Nordstrom do more to protect the environment. Using organic eggs is another way we can honor this request.
Supporting local farmers
Another important factor driving our decision to use only organic, cage-free eggs was the opportunity to support local farmers and economies. Reducing the distance from farm to table provides customers with the freshest—and most environmentally friendly—choices. Vincent Rossetti, Nordstrom's national director of restaurants, said, "We try to source our eggs locally, which means reducing our carbon footprint and bringing fresher, more flavorful eggs into our restaurants and coffee bars."
